2018 Cabernet Sauvignon
Estate grown from Brad and his father’s only Cabernet block, and made from the extremely rare Cabernet clone SAVII01. The clone is known for large bunches with tiny berries, producing beautifully concentrated flavour. Fermented naturally in a small open top fermenter, gently plunged 3 times per day to extract as much flavor and structure as possible. Pressed with a hand cranked wooden press. Aged in neutral oak barrels for 13 months.
Aromatics: Green capsicum and soft warm spices
Palate: Milk chocolate, ripe strawberries and fresh plum
Fun Fact: Every vintage, Brad and his father walk the whole Cabernet block to seek out and select the best two rows of fruit for this small batch wine.
